I shared one of my favorite go-to recipes on snapchat and I’ve been getting many requests to post it on the blog. You guys asked, so here it is!
Chicken can be boring. Why not add some excitement to it while keeping it easy, healthy and delicious? Hope you like it as much as I do. 🙂
4-6 chicken breasts
Light Lime Vinaigrette (I use Newman’s Own)
1 16oz jar of Salsa Verde
1 can diced jalapeños
1 can diced green chiles
Juice from ½ a lime
Place the chicken in the crockpot and add the salsa verde, diced jalapeños and green chiles. Add about half of the lime vinaigrette dressing and keep the rest for garnish. Squeeze half a fresh lime inside.
Cover and cook on low heat for about 6-7 hours. (Every crockpot is different.) Once the chicken is fully cooked, shred the chicken inside the crockpot in all the yummy juices. Let it sit for about 10 more minutes. Serve and enjoy.
*Optional garnish: avocado & fresh lime.
*Optional ingredients: onions, celery, peppers
I like to add a small handful of fresh cut jalapeños because I love things spicy but you could certainly leave them out.
