Take dinner or your next BBQ by the balls with this easy, healthy and delicious recipe! It’s one of my all time favorites and it’s a hit every time I serve it. It doubles nicely, so you have lunch or snacks for the following day. If you’re meal prepping, it saves you from the monotonous chicken and broccoli routine!
I always serve the turkey balls with a tomato basil marinara sauce or chili Sauce to for a dip. I love them on their own, but let’s be real, people like to dip. I respect dipping. I do it, too. When I make them for dinner I serve them with a vegetable and sweet potatoes or with zucchini pasta that I make with my spiralizer and my homemade marinara sauce with a kick!
What you’ll need:
1 pound lean ground turkey
½ cup breadcrumbs (or ground oatmeal)
1/3 cup shredded Parmesan cheese
2 tbsp olive oil
2 tbsp (or more) fresh parsley
1/3 cup diced zucchini (optional)
¼ tsp (or more) salt
¼ tsp (or more) pepper
Mix together. Place the meatballs on a cookie sheet lined with aluminum foil and lightly grease. Bake on 400 degrees for 12-15 minutes. Enjoy!
*Sometimes I will shake in some basil and oregano or a little fresh basil. I also add in some diced green peppers instead of or in addition to the zucchini! Sometimes it’s nice to mix things up!
