Coconut Skinny Sparkler

Now this is one refreshing and delicious way to celebrate the Fourth of July!

What you’ll need:

3 cups blueberries

3 tbsp lemon juice or 3 lemons

1/2 cup Vodka

2 1/2 cups Coconut LaCroix Sparking Water

Shredded coconut for garnish

Optional: splash of coconut rum

Muddle the blueberries in the blueberries in the bottom of a bowl. Add lemon juice, vodka and a splash of rum; stir together. Use a strainer (fine mesh is optimal) to strain the blueberry skins. Add Coconut La Croix and gently stir together. Garnish with coconut and a little mint and blueberries. Enjoy!
